It carried meaning far beyond flavor. That legacy is what inspired this Old Fashioned. We start by infusing Carabuena Añejo with Cocoa Nibs, giving the tequila deep cacao richness. From there, chili liqueur brings warm spice, while elote liqueur adds roasted corn sweetness — both nods to the flavors once mixed into those ancient cacao drinks. A touch of sherry layers in dried fruit richness while mole and Angostura bitters tie it all together with spice and balance. PREP IT 1.5oz (50ml) Cocoa Nib Infused Añejo 0.5oz (20ml) Ancho Reyes Chili Liqueur 0.5oz (20ml) Nixta Elote Liqueur 0.25oz (10ml) Pedro Ximenez Sherry 2 dash Mole Bitters 1 dash Angostura Aromatic Bitters MAKE IT Add the Cocoa Nib Infused Añejo, Chili Liqueur, Elote Liqueur, and Sherry to a mixing glass. Add 2 dash of Mole Bitters and 1 dash Angostura Aromatic Bitters. Add ice to the mixing glass &amp; stir 15-20 seconds to chill and dilute. Strain into a rocks glass over a large ice cube. Garnish with a Tazzo Chocolate shard. Recipe: Cocoa Nib Infused Carabuena Añejo Tequila PREP IT 1 750ml bottle Carabuena Añejo Tequila 40g cocoa nibs 1000ml or larger container with airtight lid MAKE IT Add the cocoa nibs and bottle of Carabuena Añejo to your container. We recommend giving the nibs a light toast in a pan just until they’re fragrant. After you’ve placed the cocoa nibs and Añejo in the container, seal and let it sit for 24–36 hours, shaking occasionally and tasting as you go for flavor. Once infused to your liking, strain the tequila through a fine-mesh strainer or coffee filter to catch all of the cocoa nib fragments.       <image:caption>PREP IT 1.5 oz. Carabuena Tequila Blanco 1 oz. fresh lime juice 0.5 oz. Cointreau 0.25 oz. Ancho Reyes Verde 1 tsp agave 0.75 oz. coconut milk (or substitute your choice of whole milk, oat milk, or full-fat yogurt) Fat ice MAKE IT Pour milk into a mixing glass, then set aside. Pour tequila, lime juice, Cointreau, Ancho Reyes Verde, and agave into a separate mixing glass to create your base, then pour entire base into the mixing glass of milk. Briefly stir to combine, then let mixture sit out for 1-2 hours, until it curdles. Line a fine-mesh sieve or strainer with a coffee filter. Slowly pour the curdled mixture into the lined sieve, which should be placed over a clean, clear container to catch the mixture. As the mixture begins to slowly drip into the container, watch for when the drips start to become clear in color. Once this happens, move the lined sieve to place the mixture over a fresh mixing glass to catch the remaining drips, which are comprised of the perfectly-clarified mixture. Once it slows or finishes dripping, repour the first bit of mixture from the original container (that wasn’t yet clear) back through the sieve, still placed over your second mixing glass, to finish clarifying the remaining liquid and leave nothing to waste. You are now ready to put the finishing touches on your margarita. Add ice to the mixture. Stir 12-15 seconds to chill and dilute. Strain mixture into your serving glass over fat ice, and enjoy. GABE’S TIPS While this cocktail does take awhile to prep, it is great for crowds as it is very batchable, and also shelf-stable for months. To batch this cocktail for a crowd, you can increase the ingredients to your liking (recipe measurements are for one cocktail), then add 15-18% of the total volume of filtered or distilled water to the mixture. This ensures you don’t need to shake or stir your mixture again before serving it, and it is still flavorful while going down smooth — allowing you to prep easy, pourable margaritas for your next party without getting stuck playing bartender! Aim for 20% of the total cocktail volume to be comprised of your milk base, and try to use milks with high fat content. If you are using a milk with less fat content, a 2-3% increase of the base’s volume making up the cocktail will help ensure a creamier texture. WHAT ARE YOUR FAVORITE INGREDIENTS TO INFUSE FOR SPRING COCKTAILS? “Spring to me is all about fresh flavors, floral notes, and vibrant colors. For spring infusions, I gravitate towards floral and herbal flavors, like chamomile, jasmine &amp; hibiscus teas, as well as berries, like strawberries, raspberries &amp; blackberries.  While I encourage experimenting with different ingredients, here are a few tips to keep in mind: Tea Infusions: Using teas can add great depth and complexity to your drinks. However, it’s important to approach this infusion process with a bit of caution, as the result can easily become overly astringent, which are not always pleasant to taste. Tea contains tannins, and over-extracting tea can result in your spirit tasting astringent and bitter if left to sit for too long.  Spicy Infusions: I’ve had some great results infusing habaneros and pequin peppers, but make sure to monitor &amp; taste-test frequently if going this direction—these can get very, very spicy, quickly.” WHAT TOOLS DO I NEED TO MAKE INFUSED LIQUORS AT HOME? “There are so many advanced ways to infuse and manipulate spirits that we have access to at bars &amp; restaurants, like sous vide &amp; rapid infusions — but you can get great results by keeping things simple too. All you really need is: Your spirit of choice: This process works for a range of spirits, but in my opinion, Carabuena Tequila is the only real answer! Your infusing ingredient: Fresh herbs, spices, fruits, and even vegetables, like cucumber and ginger, work well A container: Make sure it has a lid and is airtight, like a Mason jar or Cambro  Time: And a little bit of patience!” HOW DO I STORE MY INFUSED SPIRITS AND HOW LONG DO THEY LAST? “The answer depends on several factors, like what ingredient you’re infusing, the proof of the alcohol, and how you store it. In most cases, infused spirits do not need to be refrigerated. However, if you have the space and want to ensure optimal freshness, refrigeration is recommended but not strictly necessary. If you’re infusing fresh fruits, it’s a good idea to refrigerate the infusion to preserve the fruit’s freshness and flavor. This is especially true for delicate fruits like berries that may spoil faster. For standard infusions, the alcohol content should fortify just about any type of infusion and stay good for at least 4-8 months before it will start to lose its infused flavor. It will last even longer if stored in a cool, dry place, away from direct sunlight.” WHAT TIPS DO YOU HAVE FOR INFUSING TEQUILA AT HOME? “My best advice for at-home mixologists is to remain curious — there are so many beautifully unique ingredients out there that can add complexity and character to your tequila cocktails. The possibilities are endless, and the best way to explore the art of infusion is by experimenting and not being afraid to try unusual ingredients. Also, take advantage of the knowledge to be found at your local bar. Bartenders often have a wealth of experience, their own styles, and you’d be surprised at how eager they are to nerd out and share their findings with you!” RECIPE: HIBISCUS-INFUSED TEQUILA Ingredients: 1 Bottle of Carabuena Tequila: Use your choice of Blanco, Reposado, or Añejo Hibiscus Tea: 30g, your choice of loose-leaf or tea bags Instructions: Brew the hibiscus tea: Steep the hibiscus tea in hot water, then allow it to cool to room temperature. Combine the ingredients: Add the cooled hibiscus tea to the tequila in an airtight container. Infuse: Let the infusion sit for 1-2 hours, tasting occasionally. Hibiscus can become overly astringent if left too long, so it’s important to monitor &amp; taste-test throughout this step. Strain: After 1-2 hours (depending on your taste), strain the mixture using a coffee filter to remove any tea particles. The infusion should be completely clear. You can store it back in the original bottle or your container of choice. Enjoy: Once strained, your hibiscus-infused Carabuena Tequila is ready for use in cocktails! That experience profoundly influenced her art, leading her to explore the intersections of Indigenous and Latinx cultures—how their histories, struggles, and triumphs are woven together in ways often overlooked. For over 20 years, Elyse has worked as a muralist and painter, using oil, acrylic, and sculpture to tell stories that honor the voices of those who came before her. Her latest body of work, showing at SXSW, focuses on portraits and serape-inspired pieces, reinterpreting traditional woven textiles through paint. Textiles have long been a cornerstone of cultural identity, carrying generational knowledge and resistance. Through her work, Elyse seeks to revive and reimagine these threads, bridging the past and present in bold, evocative ways. "Indigenous knowledge has always been a throughline in this country, but it's a perspective that has been ignored or erased. My work is about honoring those stories, showing the ripple effects of Native culture in the Latinx community, and pushing for a deeper understanding of our shared histories." Beyond her studio practice, Elyse is an activist for Indigenous voices and greater Latinx representation in the art world. She has traveled internationally on the powwow circuit, learning from Native communities and amplifying the histories often left out of mainstream narratives. Her ongoing work challenges audiences to recognize the deep, often unspoken connections between Indigenous and Latinx identities, asking how Latinx communities can honor and understand Indigenous experiences—especially in the face of historical erasure and cultural oppression. After touring the world with Kali Úchis as her musical director, background vocalist, and guitarist while opening for Lana Del Rey in 2018, Angélica began establishing herself as a solo artist. In 2020, she delivered REINA, a debut album called "intoxicatingly smooth" (Austin Monthly) and one that "challenges what you think you know about Spanish music" (Dallas Morning News). When the album’s tour was canceled due to the global pandemic, Rahe used the time to explore visual art. From line drawings and charcoals to oil and watercolor paintings, she began to weave an intersection between sonic and visual landscapes. In 2022, Angélica re-emerged with Autorretrato, her follow-up album and musical self-portrait, in addition to Figuras, a series of figurative studies in celebration of the female form. Tequila is an excellent base spirit for these types of drinks, due to its versatility and crisp, clean flavors that easily translate into lighter, refreshing drinks without tasting watered down.  Here are three reduced ABV cocktail recipes you can make this month with Carabuena Tequila that are perfect for Damp January. 1. TEQUILA SPRITZ Ingredients: 1 oz Carabuena Tequila Blanco 1 oz fresh lime juice 1 oz agave syrup or simple syrup 2 oz sparkling wine (you can also substitute flavored sparkling water here for an even lighter cocktail!) TEQUILA COLLINS Ingredients: 1 oz Carabuena Tequila Reposado 1 oz fresh lemon juice 0.5 oz agave syrup 2 oz club soda Lemon slice, for garnish Instructions: In a shaker, combine the tequila, lemon juice, and agave syrup. Add ice and shake vigorously. Strain into a tall glass filled with ice. Top with club soda and stir gently to combine. Garnish with a lemon slice and serve. 3. TEQUILA FIZZ Ingredients: 1 oz Carabuena Tequila Blanco 0.75 oz fresh orange juice 0.5 oz agave syrup 0.5 oz egg white (or aquafaba for a vegan version) Orange zest, for garnish Instructions: Add tequila, orange juice, agave syrup, and egg white (or aquafaba) to a shaker.       <image:title>Journal - Can Tequila Go Bad? - We doubt a bottle of Carabuena Tequila is ever around long enough to get dusty on your shelf. Still, you may find yourself looking at your overcrowded bar cart and wonder: can tequila go bad?</image:title>
      <image:caption>In this Journal post, we’ll explore the shelf life of tequila you can expect, how to store your bottles of Carabuena properly, and what signs to look for to always ensure the ideal drinking experience. UNDERSTANDING TEQUILA’S LONGEVITY Carabuena Tequila’s high concentration of alcohol content of 40% ABV acts as a natural preservative, making tequila (and similar spirits) unlikely to spoil in the way most perishable foods do. In fact, an unopened bottle of tequila can last indefinitely, if stored correctly. It’s best to keep it in a cool, dark place away from direct sunlight and temperature fluctuations. However, this doesn’t mean that tequila — no matter how quality it is when you buy it — is immune to decreases in quality over time. Once you’ve opened a bottle, the oxidation process begins. While tequila won’t spoil in the way milk or fruit juice does, it can absolutely lose its vibrant flavors and aromas over time. Typically, an opened bottle of tequila is best consumed within 1 to 2 years for optimal taste and aroma. SIGNS YOUR TEQUILA HAS DETERIORATED While tequila may not "go bad" in the traditional sense, there are some indicators that your dusty bottle might not be at its prime: Changes in Color: If you notice that the color has become darker or murky since you first bought it, it may indicate that the tequila has been negatively affected by light or air. Off Smell: A musty or unpleasant odor can signal that your tequila has oxidized or been contaminated. Trust your nose —if it smells off, it’s best to discard it and re-up at your local retailer. Altered Flavor: If you take a sip and find that the flavor is flat, dull, or has unexpected notes, the tequila may have degraded over time. HOW TO STORE TEQUILA FOR LONGEVITY To ensure your tequila remains at its best as long as possible, follow these storage tips: Keep It Upright: Store tequila bottles upright to prevent the cork from deteriorating and coming into contact with the liquid. Seal It Tightly: After pouring yourself a drink, make sure to close the bottle tightly to limit exposure to air. Avoid Temperature Fluctuations: Store your tequila in a cool, stable environment. Avoid places with extreme temperatures, like near the oven or in direct sunlight. Better yet — don’t let an open bottle linger too long.       <image:caption>Born in Monterrey, MX and currently residing in Austin, Diego spent his early art career as a painter, before picking up a camera which ultimately led him to spending over a decade documenting the native peoples of México, rediscovering &amp; sharing forgotten places that hold significant cultural wealth. “I saw myself as a painter, a muralist, like the great Mexican muralists, Rivera, Siqueiros, and Orozco,” Huerta said. “And I was for a while—painting opened the doors to worlds that only existed in my head, but destiny had another way — the photography. Immediately it was an almost natural, instantaneous connection. The experimentation became something of my day to day; it learns what it did badly and what it did well, taking notes of everything, trial and error. I never had anyone to teach me or take the time to show me the correct technique, so I had to discover it by myself.” Through his lens, Diego has created an essential photographic archive, with work published by National Geographic and other highly-regarded media outlets in the United States. “From an early age, I discovered that traveling opens up the perspective of the world and its interaction among humans, and that is how I began to specialize in portrait photography.
